How I kicked the leaders of Chile
We have just returned from the Fiery Foods Show, held again in Albuquerque, New Mexico and I had a lot of people asking the hottest pepper of Chile we have offered. I smiled, not at their extreme passion for Scoville units, but because I could not provide them with anything hotter than our Coyote Trail Green Chile Sauce. Of course, Chile, the green sauce has a little heat, but nothing like what these people were looking. I thought back to our starting a solid business plan, the time we were also looking for heat.
We embarked on the path to heat with fury. Could we also create the hottest sauce in the world? Habanero chiles flooded my desk. The test kitchen had the clouds hung low in Chile, enough to cause sneezing and coughing through cloth masks. People wanted the heat and by golly we were going to give them. Perhaps I would like my buddy, Dave Hirschkop, creator Dave Insanity Sauce, which the rumor of having once been banned from the Fiery Foods Show because his sauces were so deadly hot.
We were on the road and my stomach has been to convert the cells into a mamma would be proud intestine, iron arch Chile Pepper cast. I tasted a dozen formulas. Raspberry chipotle habanero relish. And then there was a Zinger fishing with enough firepower to start a missile. Roy, our product analyst was especially proud of a tomatillo and spread Jolokia Chile that was spread gently on toast. Bite morning, as I suppose fishing.
With all the options, two stand out, but I was uncomfortable. Not only my stomach lining, but my instinct. The market is full of hot sauces with appropriate names referring to body parts and functions. Where do we fit?
When I started in New Mexico Chile Company, I wanted to give gourmet sauces and our slogan was immediately put in place-Coyote Trail Making-Gourmet Sauces daily. I was adamant that all the sauces should marry well with food and wine. If sauce is too hot or too overwhelming that not compliment food. Now, I am branching off into the hot sauce business. Very soon, I would having a job makes the intestine deadline approached.
I came to my mind one day while flying to California and as it should I read the story Herb Kelleher, describing how he had started Southwest Airlines. The book is titled Nuts and in this classic business It tells the story of maintaining the road to success.
Despite the distractions, he put on the blinders and ventured Business with a plan set in stone. Southwest, he wrote, does not fly international because it was not what they have done the same. Their business was a short distance carrier catering to business people. The journey of five Hundred mile is their expertise. And for years, the meetings Council, he fought the urge to expand and conquer airwaves beyond what they have done the same.
It appears that other airlines disagreed and once they solidified their local position, they opened international routes. If they could fly around California, surely they could put their wings into Europe. Many have tried and mostly failed and all ended up losing money.
This struck me, deep and weary at the time the flight attendant walked, inquired about beverages and dropped two packages of roasted nuts on my shelf.
I then decided that the bite of the morning was not for us. We remain focused on prosperity, watching Chile to head down to the madness that levels of concentration of capsicum will deliver. Dave could rest easy. I threw myself to the Chilean society leaders.
We will continue to make the sauce the best in the world and we really enchilada not understand the world is a better place because of our Green Chili Sauce. It can not be the morning bite, but Santa Fe Chicken is a staple in many of our customers and it is good enough for me.
Santa Fe chicken easy chicken recipe
Ingredient
2 pounds boneless chicken breasts
1 cup onion br
2 cloves garlic
2 v. tsp olive oil
16 oz Coyote Trail Green Chile Sauce
8 oz shredded cheddar cheese
cilantro or parsley for garnish
Optional garnish: sour cream (Except for the table Do not cook), sliced black olives, Roma tomatoes nchopped
In a large skillet, fry chicken, The Chop onion and garlic, brown the chicken, drain important. Add Coyote Trail Green Chile Sauce. Top with cheese and other ingredients if necessary optional. Transfer oven to 350 degrees. Bake until it bubbles, about 12 minutes
Garnish with remaining toppings. Serve with tortillas, beans, salad
